Doodlekit is one of the most unusable and unintuitive website builders on the market. Editing the limited number of templates is confusing and convoluted and taking advantage of the advertised features is more trouble than it’s worth. All I need is the most basic site with detail and a pic of my book. I don’t need a pay page and am happy just to direct people to Amazon etc. should they wish to purchase. Even writing this I feel sure you have covered everything I am asking here. But could you offer some suggestions on the best way forward? I should add here (and I know there would be options for me should money not be a problem) that unfortunately throwing a lot of money at this is (unfortunately) not an option.
Heading tags is the HTML markup that tells browsers that it's a headline or a title. Like people, search engines will scan through the headings of your page to get an understanding of what your page content is about. You should create descriptive headlines for all your text content. You can also include keywords that you're trying to target to make your headings even more relevant.

Google will INDEX perhaps 1000s of characters in a title… but I don’t think anyone knows exactly how many characters or words Google will count AS a TITLE TAG when determining RELEVANCE OF A DOCUMENT for ranking purposes. It is a very hard thing to try to isolate accurately with all the testing and obfuscation Google uses to hide it’s ‘secret sauce’. I have had ranking success with longer titles – much longer titles. Google certainly reads ALL the words in your page title (unless you are spamming it silly, of course).
to avoid throwing link equity away, you might create HIGH LEVEL IN-DEPTH TOPIC PAGES on your site and redirect (or use canonical redirects) any related expired content that HAVE INCOMING BACKLINKS, to this topic page (and keep it updated, folding content from old pages, where relevant and there is traffic opportunity, to create TOPIC pages that are focused on the customer e.g. information pages)

I added one keyword to the page in plain text because adding the actual ‘keyword phrase’ itself would have made my text read a bit keyword stuffed for other variations of the main term. It gets interesting if you do that to a lot of pages, and a lot of keyword phrases. The important thing is keyword research – and knowing which unique keywords to add.

This might be more of a post-launch check, but with some websites still getting redesigned to be responsive or mobile-friendly, it may also be good to check Google Search Console after you launch your website and track your mobile-friendliness. This is especially true for large sites who may have thousands of pages with poor mobile usability. Hopefully those numbers drop after your redesign and maybe, maybe even see some bumps in other metrics.
I prefer simple SEO techniques and ones that can be measured in some way. I have never just wanted to rank for competitive terms; I have always wanted to understand at least some of the reasons why a page ranked for these key phrases. I try to create a good user experience for humans AND search engines. If you make high-quality text content relevant and suitable for both these audiences, you’ll more than likely find success in organic listings and you might not ever need to get into the technical side of things, like redirects and search engine friendly URLs.

 Keyword Stuffing in Description: Yet another warning about stuffing of keywords, this time it is in the description. Keyword was stuffing a danger zone and should not be toyed with as it can land your page on the last page of a search engine. Your Meta tag description of about 155 should contain your keywords. These keywords should not be in multiple folds; they are to appear few times. Stuffing keywords in your Meta tag description will not increase your ranking further but will catch the user attention to visit your website from search engines.
